Spring Greetings from South River Miso!

After a very cold and snowy winter at South River, we gratefully welcome the spring. The grass is so green and grows fast-almost as you watch it. Tiny yellow-green leaves appear magically on the trees.

Lately, I’ve been enjoying a very basic miso soup which I share in the recipe below. Mixing a light and dark variety of our miso makes a delicious broth. The savory umami of the dark and the gentle sweetness of the light miso combine beautifully. Recently, for several days, I ate only a basic miso soup with vegetables and tofu, along with cooked whole grains. After that, I felt such a surge of energy and renewal. Miso is an ancient food, enjoyed for over 1300 years in Japan, and is a great health boost for us in modern times. South River Miso is organic, made with wood-fired cooking, hand crafted by a small group of dedicated people in the clean countryside of western Massachusetts.

Our New Green Packaging!

We are now using a fully biodegradable, upcycled packing material from Cruz Foam. This is a vast improvement over Styrofoam as it is made from food waste by-products and will naturally decompose into nutrient-rich soil after use.

Order by April 30th for shipping to southern and western states (regions B, C, & D in map below)

Back to Basics Miso Soup

Serves 4

Ingredients

4 cups of water
1 tbsp olive oil
1 onion
1 carrot
1 stick of celery
2 cloves of garlic
A handful of fresh greens
14 oz of firm tofu
2 scallions
Small sheet of Nori seaweed

Directions

1. Dice the onion. Cut the carrot into thin diagonal pieces. Cut celery into small diagonal pieces. Mince 2 cloves of fresh garlic (optional).
2. Cut tofu into small cubes.
3. Sauté onions and garlic in 2 teaspoons of olive oil. Add celery and carrots. Cook for two minutes stirring occasionally. Add some water if it’s sticking.
4. Add all sautéed vegetables to the water along with cubed tofu.
5. Bring the water to a simmer. Let cook 5 or 6 minutes. Add some chopped greens and 1 finely chopped scallion. Cook for another minute.
6. In a bowl, mix the light and dark misos with 3 tbsp of the soup broth.
7. Turn off heat and add miso to the soup. Garnish with the remaining chopped scallion and thin slices of Nori seaweed. Serve immediately.
