We first made this soy-free variety for a customer who requested a long-term barley miso, but without soybeans. We use the Chick Pea, staple of Middle Eastern peoples since ancient times, and one of the most easily digestible beans. Like its Three Year Barley cousin, this miso has a rich, hearty flavor with a well rounded taste. Aged for a minimum of three summers.
Ingredients: Deep well water, organic barley, organic chickpeas, sun-dried sea salt, organic sea vegetables, and koji culture.
