Baked Pinto Beans with Miso
1 cup pinto beans
3 cups water
¾ cup minced onion
¼ cup miso
Wash beans and soak in water for 1 hour. Pressure cook beans in soaking water for 45 minutes. Heat a skillet, brush with oil and sauté onion. In a baking dish combine onions, cooked beans and miso. Bake 3-4 hours in a 275 degree oven.
For variety, you can bake most kinds of beans in this way. Vegetables such as onions and carrots can be baked together with the beans from the beginning. They become meltingly tender and add a sweet juiciness to the beans.
